There are days when I can be bothered to make pizza and there are days when I crave it but I don’t have the hours or the energy in me to go the whole hog. On those days, I make Sicilian pizza.
Now listen, you could totally spend three days making this pizza if you wanted to make your dough from scratch, with a poolish and a 48 hour bulk fermentation in the fridge, but this recipe is for a sub 3 hour schedule. It relies on store bought pizza dough, or in my case, having some stashed away in the back of the freezer.
I first tried this style of pizza back in May when I visited Castellamare Del Golf on my very first solo / post break up trip, more on that and many recommendations can be found here. I had a perfect slice from a tiny little unassuming bakery and, with a cold mid afternoon beer, it really hit the spot. It’s more like a heavily decorated focaccia slice than any pizza I have eaten before, but it is no less delicious, and occupies a different pizza space in my mind.
