I remember being a teenager and scouring the 4OD website for a cooking show I hadn’t yet watched - I was a wild teen, growing up in the rural countryside with no public transport, I had to entertain myself. I landed on a series of short episodes of classic Conran recipes. One of them was a pasta sauce I had never seen before but that I thought was genius; wilted dark leafy greens in salted water, blended with garlic, parmesan and pasta water, resulting in a bright green silky pasta sauce that had me gripped. I tried to recreate it but struggled with only a food processor at my disposal, this was well before NutriBullet came on the scene. Since then I have noticed green pasta sauces everywhere, Jamie Oliver has a great one in his book, Five Ingredients. This is the way I like to make it.
Gnocchi is easy and satisfying to make, it doesn’t require any specialist equipment and it is one of the most comforting foods to eat. If you’ve never tried to make your own Gnocchi, this is your sign to give it a go, I promise you will be surprised at how simple and easy it really is.
