Autumn is truly here and one of the sparkling gems of the season is crisp, sherbety, tart apples. I don’t bake cakes very often, I’m more of a salty snack girl, but an apple cake is something I find very hard to resist. When I was far too young to be legally working, I had a weekend job in the little cafe in my village. I mostly did the washing up and took out hot plates of scrambled eggs and bacon buttys to the hoards of cyclers and walkers that passed through. One of the things I remember most vividly from that job, apart from the smell of the deep fat fryer, was the perfect apple cake we served, baked by the owners wife every day, fresh from her home kitchen. It was a classic, apple cake and would be served warm with a scoop of vanilla ice cream. Nothing better after a long walk on a blustery autumn day.
